Manzanilla Olive harvested during September and October take 6 to 7 months preservation process in Brine and select ingredients such as anchovy, garlic, cumin etc.
Sweet and Hot Paprika (Pimiento de la Vera). This paprika crop starts in March in seedbeds where the plants stay until May, then they are transplanted. The crop is harvested by hand at the end of September, when the fruit is ripe and perfectly red.
Piquillo Pepper (Red and Green). Harvested by hand between September and December.
Mushroom (Champiñón) and Large Butter Beans (Judion) harvest begins while the Grape harvest continues.
Artichoke harvest begin.
