Chorizo Ibérico is made from the meat of black Ibérico hogs. To make this chorizo, the butchers at Don Juan hand-select the finest cuts of lean Ibérico ham and grind the meat before blending it with salt and lightly smoky paprika. This is then placed in natural casings and cured for a minimum of 60 days.
The final result is a strikingly red salami that is practically bursting with the flavor of centuries of Iberian gastronomic tradition.
