This incredible prosciutto from Carpegna, Italy, is treasured for its intense flavor and soft, almost elastic texture. Prosciutto di Carpegna has a typical round shape but is more flattened, distinguishing it from other types of prosciutto such as prosciutto di Parma and prosciutto di San Daniele.

This air dried ham is made only from pesante padano pigs found in the Italian regions of Lombardia, Emilia-Romagna, and La Marche. During the salting process, it’s cured with sweet Cervian sea salt for at least 10 months, then coated with lard and a special spice blend.
