Semolina (Wheat), Durum Wheat Flour, Niacin (Vitamin B3), Ferrous Sulphate (Iron), Thiamine Mononitrate (Vitamin B1), Riboflavin (Vitamin B2), Folic Acid.
Directions
Express Cooking: 50 Servings (100 oz) water needed, 6.25 gallons; 80 Servings (160 oz) water needed, 10 gallons; 100 Servings (200 oz) water needed, 12.5 gallons. 1/4 Pound (4 oz) Pasta; 4 cups Water; 1 Teaspoon Salt (if desired). Add salt to boiling water. Add pasta, stirring occasionally. To achieve the best results, drain pasta a minute earlier than the recommended cooking time as printed on the bag and finish the cooking process by tossing the pasta and sauce in a saute pan. Double Cooking: 1/4 Pound (4 oz.) Pasta; 4 cups Water; 1 Teaspoon Salt (if desired). Add salt to boiling water. Add pasta, stirring occasionally. Cook the pasta in boiling water following the recommended pre-cooking time as printed on the bag. Drain the pasta and drizzle some olive oil over it. Cool the pasta down using a blast chiller. Store it (0-3 degrees C or 32-37 degrees F) on a steel tray and cover it. Alternately, place the drained pasta on a sheet tray and drizzle with a little bit of olive oil, cool to room temperature or place tray in walk in cooler until chilled. After the pasta is chilled, store it in plastic container with a lid or sealed plastic bag for a maximum of 48 hours. Before service, boil the pasta a second time for 40-60 seconds, drain the pasta and serve with your favorite sauce.
