CITRAS -TEXTURAS by Albert and Ferran Adrià

Citras – Texturas by Albert and Ferran Adrià is a sodium citrate-based ingredient that regulates acidity and prevents unwanted coagulation, making it essential for spherification and dairy stabilization. Perfect for modernist cuisine, it allows chefs to achieve smooth textures in foams, spheres, and emulsions. An indispensable tool for molecular gastronomy.

Description

TEXTURAS Citras based on sodium citrate, obtained mainly from citrus fruits, which is usually used in food to prevent the darkening of cut fruits and vegetables. It has the property of reducing the acidity of foods, so its use makes it possible to obtain spherical preparations with ingredients of excessive acidity. It is easy to dissolve and acts instantly.

• Composition: Citras is sodium citrate, a sodium salt of citric acid. It is primarily used to regulate the pH of liquids.
• Properties: Sodium citrate is important in spherification as it prevents liquids from becoming too acidic, which can interfere with the gelling process when using Algin and Calcic. Citras helps reduce acidity and neutralize high pH levels, ensuring successful spherification.
• Uses: Citras is used in liquids that are too acidic to spherify directly, such as citrus juices or vinegars. By buffering the acidity, it ensures the liquid can interact effectively with the calcium solution and form stable spheres.

Together, these products enable chefs to create unique dishes with bursting liquid centers, adding a sensory surprise and a modern touch to fine dining experiences.
